AL KABSA - TRADITIONAL SAUDI RICE (& CHICKEN) DISH

INGREDIENTS



  • 1⁄4 cup butter
  • 3 lbs chicken, cut into 8-10 pieces
  • 1 large onion, finely chopped
  • 6 garlic cloves, minced
  • 1⁄4 cup tomato puree
  • 14 ounces canned chopped tomatoes, un-drained (or fresh)
  • 3 medium carrots, grated
  • 2 whole cloves
  • 1 pinch grated nutmeg
  • 1 pinch ground cumin
  • 1 pinch ground coriander
  • salt & freshly ground black pepper
  • 4 cups hot water
  • 1 chicken stock cube
  • 2 1⁄4 cups basmati rice (don't rinse or soak this)
  • 1⁄4 cup raisins
  • 1⁄4 cup slivered almonds, toasted
  • KABSA SPICE MIX
  • 1⁄2 teaspoon saffron
  • 1⁄4 teaspoon ground green cardamoms
  • 1⁄2 teaspoon ground cinnamon
  • 1⁄2 teaspoon ground allspice
  • 1⁄4 teaspoon white pepper
  • 1⁄2 teaspoon ground dried limes

DIRECTIONS



  1. Melt butter in a large stock pot, casserole or dutch oven. Add chicken pieces, onion & garlic & sauté until onion is tender. Stir in tomato puree & simmer over a low heat for a couple of minutes.
  2. Add tomatoes, carrots, cloves, all the spices & salt and pepper. Cook for a couple of minutes. Add the water & Maggi cube.
  3. Bring to a boil, then reduce heat and cover. Simmer over low heat for 30 minutes. Add rice to the pot & stir carefully. (if you're wanting to brown the chicken in the oven - remove it from the pot now & place in the preheated oven).
  4. Re-Cover & simmer for 35 - 40 minutes - adding the raisins for the last 10 minutes - or until rice is tender.
  5. Place the rice on a large serving dish, topped with the chicken & garnished with almonds. Serve with a fresh mixed salad - preferably with a little lime vinaigrette. Saudis like their Kabsa with a hot sauce called 'Shattah'.

  • 100 gm Wheat flour
For Garnishing
  • 50 gm Mint Leaves
  • 1 medium thinly sliced onion
  • 6 strand soaked saffron
For The Main Dish
  • 250 gm beaten yoghurt (curd)
  • 25 gm ginger paste
  • 7 gm mace powder
  • 25 gm Garlic paste
  • 2 pinches powdered green cardamom

How to make Chicken Dum Biryani


Step 1: To prepare this Mughlai recipe, take a large bowl mix yoghurt (curd) with red chilli powder, turmeric powder, cumin powder, coriander powder, along with ginger and garlic paste. Mix all the ingredients well and add chopped chicken into the mixture and let the chicken marinade for about an hour. When the chicken is marinated, add thinly sliced onions and salt to it.

Step 2: To cook the chicken, put a copper vessel on low-medium flame and heat ghee in it and add all the whole spices. Let the spices crackle and add the marinated chicken into the vessel. Saute the chicken well.

Step 3 :Now add ginger and garlic paste into the chicken along with the sliced onions, and saute them again for a minute.

Step 4: Then add the beaten curd and saute the chicken till the oil separates. When the oil is separated, add mace and cardamom powder into it and saute the chicken for a minute. And then add the water and cook the chicken on low-medium flame. Put the lid on vessel once the chicken is cooked.

Step 5: Now on another burner, boil water in a pan and add the whole spices along with salt and lemon juice. Once the water starts boiling, add the basmati rice and cook till the rice are cooked into it.

Step 6: Open the copper vessel's lid and layer the rice on top of the cooked chicken. Above the rice layer, add ghee and cream nicely. Now, make a final layer of the garnishing with mint leaves, saffron an thinly sliced onions.

Step 7: Make a dough of the whole wheat flour and line the lid with it. Seal the copper vessel, and put the vessel on an iron griddle and cook for 15 minutes. Serve it hot.

  • 150 ml Worcestershire sauce

  • 750 ml fresh apple juice
  • 200 ml runny honey
  • POTATO SALAD
  • 500 g baby new potatoes
  • ½ a bunch of fresh dill , (15g)
  • 1 bunch of fresh chives , (30g)
  • 50 g pickled onions
  • 1 eating apple
  • 1 ripe pear
  • 200 g Greek yoghurt

Method


  1. Preheat the oven to 140ºC/275ºF/gas 1.
  2. Place the sea salt, white peppercorns and bay leaves into a pestle and mortar and bash until fine (or whiz in a blender), then decant into a jar.
  3. Rub 2 tablespoons of flavoured salt over the racks of ribs (save the remaining salt for another day), then transfer to two baking trays and cover with tin foil. In a 25cm x 30cm high-sided tray, mix the barbecue sauce ingredients together.
  4. Transfer all the trays to the oven for 3 hours, placing the sauce tray at the very bottom uncovered, adding a splash of water to loosen, if needed.
  5. When the time’s up, remove the trays from the oven, adding a splash of water to each of the rib trays to deglaze.
  6. Divide a quarter of the sauce (roughly 300g) between the rib trays (freeze the rest for another day), turning the ribs with tongs to coat, then place the ribs directly onto the bars of the oven, with the empty sauce tray directly below.
  7. Place a small handful of whisky wood chips into a metal sieve and set them alight. Once smoking, put the sieve into a metal bowl, place at the very bottom of the oven and smoke the ribs for 30 minutes, or until sticky and caramelised.
  8. Meanwhile, make your potato salad. Scrub the potatoes, then cook in a pan of boiling salted water for 15 minutes, or until tender, then drain and leave to cool slightly.
  9. Pick the dill, then finely chop with the chives, and place in a large bowl. Slice the pickled onions, then core and finely matchstick the apple and pear, and place in the bowl.
  10. Add the yoghurt, mustard and warm potatoes, then toss together to coat. Taste and season to perfection.
  11. Transfer the racks to a board and slice into individual ribs, drizzling any juices from the tray over the top. Finely slice the radishes and sprinkle over the top, then serve with the potato salad.

  1. Place the consomme and chicken in a large saucepan and bring to the boil over high heat. Reduce heat to low and simmer for 5 minutes or until chicken is cooked through. Transfer chicken to a heatproof bowl. Set aside for 5 minutes to cool slightly. Finely shred.
  2. Add the soy sauce and ginger to the consomme mixture. Place the cornflour in a small bowl and gradually stir in the water until smooth and combined. Gradually stir the cornflour mixture into the consomme mixture. Cook, stirring occasionally, for 2 minutes or until consomme thickens slightly. Add the chicken, creamed corn, corn and ham and cook, stirring occasionally, for 2 minutes or until hot.
  3. Use a fork to whisk the egg whites in a small bowl. Gradually pour the egg whites into the soup, stirring constantly with a wooden spoon.
  4. Cook for 2 minutes or until white ribbons swirl though the soup. Remove from heat.
  5. Add the sesame oil and half the green shallot and stir to combine. Taste and season with salt and pepper. Ladle the soup among serving bowls and sprinkle with the remaining green shallot. Serve immediately.

  7. Garnish with ginger strips and chopped cilantro
